I was trying to think of what kind of light, healthy lunch to put together this week. I wanted something different. Something refreshing. Oh yeah, and easy. It’s gotta be easy.
I’ve always loved Waldorf salads. Traditionally they don’t contain chicken, but the added protein is great for the body. And the Greek yogurt is tangy and makes a creamy dressing, again with additional protein. I also swapped out toasted walnuts for sliced almonds. Simply because. Walnuts, almonds even pecans would work well. It’s up to you.

3/4 c. non-fat plain Greek yogurt
1/4 c. light mayonnaise
1 Tbls. agave (or honey or sugar, whatever sweetener you like to use)
1/4 tsp. kosher salt
1 Tbls. tarragon (fresh or dried)
fresh ground pepper to taste
1 medium apple, unpeeled, chopped
1 Tbls. fresh squeezed lemon juice
1 stalk celery, finely chopped
2 c. chicken breast (I grilled with a spray of olive oil and salt & pepper, but you can cook it however you want)
1 c. red, seedless grapes (halved)
1/2 c. sliced almonds (plus more to sprinkle on top if serving on a bed of greens)
In a small bowl mix all dressing ingredients and set aside.
In a large bowl, add lemon juice to apples and stir. Add all other ingredients then add dressing and fold together. Add as much dressing as you want. I found I had a little extra for my taste, but if you are not eating immediately it will soak in a little, so it’s better to be on the heavier side so it isn’t dry.
Serve on a bed of greens or in a wrap. I, of course wrapped it in a honey wheat sandwich wrap.
